Diestel Turkey Breakfast Sausage Casserole

Ingredients

  • 1/2 lb Breakfast Sausage
  • 1 tbsp Olive Oil
  • 1/4 cup Onion (finely chopped)
  • 1/2 cup Bell pepper (chopped)
  • 1 1/2 cup Frozen hashbrowns
  • 1 cup Shredded cheddar cheese
  • 1/2 cup Pancake mix (we used Bisquick)
  • 1 cup Milk
  • Eggs
  • Dash Salt & Pepper

Directions

  1. Preheat oven to 400 degrees. Take a 9x9 oven-safe pan, grease it and then set aside.
  2. In a medium skillet, add olive oil and set to medium heat. Add your Diestel Turkey Breakfast Sausage and brown until cooked throughout. Then push meat to the side and add your onion and pepper. Cook until the onion is translucent and peppers are soft.
  3. In a large bowl, add hashbrowns and half of the cheese to the sausage, peppers and onions you just finished cooking. Mix together until well combined.
  4. In a seperate bowl, mix together pancake mix, milk, eggs and salt & pepper until well combined.
  5. Place the hashbrown mixture in your greased pan. Then pour the egg mixture over the top.
  6. Cover the pan with foil and then bake for 45 minutes.
  7. Take the casserole out and sprinkle remaining cheese on top. Bake for another 5 minutes.

Note: This recipe can be prepped the night before. Place in pan, cover and refrigerate. Then bake the morning you plan to serve it.
